Now add the wet mixture to the dry mixture and whisk together until just fully combined. In a separate bowl, add the WET INGREDIENTS which are the milk, melted and slightly cooled butter, vanilla, and eggs. In a large bowl, add the DRY INGREDIENTS which are the all purpose flour, Mochiko sweet rice flour, granulated sugar, baking powder, and salt. The RECIPE IS EASY! Believe it or not, I discovered that I could use a PARTY HAT (from the Dollar Store) turned UPSIDE DOWN (and string removed of course – haha!) Bargain Mama! Pour 3/4 to 1 cup of batter into the iron and cook it for about 3 minutes for soft and 4 to 5 minutes for crispy. So, I bought a HONG KONG EGG WAFFLE MAKER, and started making them, BUT I MAKE MINE WITH MOCHI FLOUR! Mochiko brand to be exact. Made in a special waffle iron, they emerge with this PUFFY, BUBBLY TEXTURE that’ll make anyone curious to try it. One of their CLASSIC STREET FOOD ITEMS that I came across some time ago is EGG BUBBLE WAFFLES.
I haven’t been to Hong Kong yet, but some of the STREET FOOD coming from there is not only cutting edge, but CRAZY AMAZING!
